According to James Hibberd at TV Week, the team behind the Family Guy Star Wars episode may take a crack at parodying The Empire Strikes Back next year, possibly even having it be an annual event like The Simpsons Halloween specials.
One good thing about parodying Empire is that they can touch on the Han/Leia romance since the roles are played by Peter and Lois Griffin, respectively, who are married on the show. The producers weren't allowed to touch the Luke/Leia kiss because they wanted to play on the incest angle (which would have worked doubly so since Luke was played by Lois' son Chris). This logic may also explain why Princess Leia is played by Lois rather than Meg.
In my experience, the entertainment business usually gets caught up in anything that is even moderately successful and automatically thinks sequels. It makes sense, considering the good ratings the episode got. However, unlike the unlimited potential for The Simpsons Halloween, they have only a limited number of movies to parody. In five years, they'd be done. What would they parody after that? The Ewok Adventure?

I think it'd be a great idea. Like Lucas said "It takes 3 years to make a star wars movie" it could be "It takes 1 year to make a star wars parody." :)

I think it would be funny if they did the first three and then when they were going to do the prequels Peter goes... "Those are not real Star Wars".
And the show will be on the air in 5 years, there are a lot of dumb people that keep The Simpson's on 20 years, King of the Hill over 10 years. While not enough smart people to keep Futurama on.

They'll do Indiana Jones after that. Simple as that. Like Peter said in the Mos Eisley Cantina: "Hi, my name is Han Solo and I'm the only actor who's career won't be ruined by this movie".
They'll be fine until Season 10 with Star Wars, until Season 13 with Indy and after that - who knows?

I thought about it and think they should go directly from "Return of the Jedi" to "Indiana Jones and the Last Crusade". Episodes I to III are simply too bad to spoof. And I guess they would never do it because of "Hi, and I'm Haiden Christensen". Or maybe they would like to do what Patton Oswalt would do if he got a time machine and a shovel.
Star Trek is definitely a nice idea. I hope they do some of the original stuff and then First Contact, the only good one with the TNG crew. There I said it :-)
