Just reading the description of The Stephen Colbert, a pork chop from Trio's Restaurant in Little Rock, Arkansas has me salivating like Pavlov's dog:
If you love freedom, and we know you do, you'll love this porkchop: a porterhouse cut pork chop marinated in an apple marinade, grilled, and covered with a South Carolina peach & ginger barbeque sauce served with Sweet Home black-eyed peas, chipotle-white cheddar mashed potatoes and sautéed Swiss chard.
Damn, does that sound tasty. You might wonder, as I did, what the hell the connection is to Stephen Colbert. I believe it's the "South Carolina peach & ginger barbeque sauce," since Colbert hails from South Carolina.
The chop is only seventeen dollars, which I would gladly pay. Hell, I'd give my first born child for that pork chop.* Unfortunately, it looks as if the delectable pork chop may not be a permanent menu item. No worries, I'm trying to come up with my own version of it by putting a pork chop, a peach and a jar of applesauce in a blender. I call it a Colbert Smoothie.
*Upon reflection, perhaps I shouldn't write about food right before lunch.

I don't think a piece of pork is a good idea. Steak is AMerican, pork is not.

This dish sounds overindulgent, which is more American than apple pie

"and sautéed Swiss chard."
Hm, don't know about that, aren't the Swiss always neutral? Plus some percentage of Swiss are francophones. It should be "freedom chard."

I'll be damned if that doesn't sound good enough to eat!
I need to make a note of the restaurant as my family and I will be passing through Little Rock this summer and I always have a healthy hankering for a hunk o' hog.
